Roasted butternut squash soup
1 butternut squash ( pealed and diced)
1 gala apple ( pealed cored and diced)
1cup chicken broth
1/2 teaspoon dried sage
1/4 cup heavy cream
Salt and pepper to taste
Place squash and apple on a baking sheet a pan drizzle with a little olive oil sprinkle salt and pepper and place in a pre heated oven at 400 degrees roast for about 30 min or until tender and soft remove from oven and carefully transfer in to blender add in chicken broth, cream and sage blend on hi until smooth serve at once.

Italian sausage with leeks and fennel
1 pack Italian sausage ( hot or mild sliced)
1 fennel bulb ( sliced in thin strips)
1 leek(diced& washed)
2 tablespoons olive oil
Salt and pepper to taste
Heat a large skillet on med heat add oil sauté leeks and fennel for about 5 min add in sausage and sauté 15-20 minutes more or until sausage is done and enjoy.
