As we plan for Mother's Day, college and high school graduations and Memorial Day, it would be a good time for us to take time for families to refect on and reform what we eat and how we live. That's why, the Columbia Urban League is announcing a new program called "Healthy Futures."
"Healthy Futures," is a 10-week diet and exercise program. In Collaboration with USC's Cancer Prevention and Control Program and the state Department of Health and Environmental Control, "Healthy Futures" is designed to help end obesity, particularly childhood obesity, among African Americans.
Healthy Macaroni & Cheese:

1 1/2 cups whole wheat pasta
2 Tbsp Smart Balance
2 Tbsp whole wheat flour
1 1/4 cups skim milk
1/4 tsp paprika
1 cup 2% sharp cheddar cheese
1. Boil Pasta
2. Melt butter in pan then blend in flour.
3. Gradually add milk, stirring constantly until mixture boils and thickens.
4. Lower heat before adding paprika and cheese.
5. Stir in pasta.
