The Squonk Opera is coming to the Harbison Theatre March 2-3.  What is Squonk?  “A mesmerizing audio-visual experience,” of course.

Ready for job season?

When you think of seasonal employment, it’s the holidays that you probably naturally gravitate to, but according to Lori Cook from the Richland Library Job Center, the spring offers jobs in a myriad of places. 

Home Depot (expected to hire nearly 200), Lowe’s, and other Gardening/Nursery and like businesses will begin expanding in preparation for spring. Don’t forget the businesses that support gardening and home improvements like contractors, exterminators, pool installers, landscapers, irrigation installers, and others.

Check out our local parks and recreation departments for opportunities such as lifeguards, referees, and program coordinators. Also, tourism will pick up starting in May so look for businesses that support tourism.

Trader Joe’s is opening up on Forest Drive. “Quaker Steak and Lube” is a new Wings Restaurant in NE that is expected to be hiring 100.

Midlands Job Fair March 25. Hiring our Heroes March 5. Check your local schools and colleges (CC has one for students February 28, Spring Valley on March 7)

Look in the SC Commerce Department Newsroom for businesses expanding in SC. New Recycling plant in Aiken to create 200 jobs.

Heart Healthy chicken and pasta

Yes, it is possible!  Chef Gary joined us this morning to show us how.  Here is the recipe

1 lb Italian chicken sausage, sliced

1 (12 ounce) package bow tie pasta

1 (10 ounce) package frozen chopped spinach, thawed and drained

1 tablespoon olive oil

3 garlic cloves, chopped

1/2 cup white wine

1/2 teaspoon black pepper

Directions:

1. Bring a large pot of lightly salted water to a boil. Add the bow-tie pasta, and cook until aldente, 8 to 10 minutes. Remove 1 cup pasta liquid to thin sauce. Drain and return to the pot along with the spinach; keep warm over medium-low heat.

2. While the pasta cooks, place the sliced sausage links onto a fry pan, and cook until the sausage is crispy on the outside and no longer pink on the inside, about 8 minutes. Stirring the sausage as it cooks. Remove from pan and drain excess oil.

3. In the same pan, add the olive oil over medium heat, stir in the garlic, and cook until the garlic softens, about 3 minutes.

4. Add wine and black pepper and cooked sausage. then bring to a simmer over medium high heat for 15 minutes. Thin sauce to desired consistency with reserved pasta water.

5. Pour the sauce into the pasta and spinach pot. Stir until the pasta is hot and well coated with the sauce.
