Here is your GDC Morning WACH for Friday February 1, 2013:
It’s a Food Friday, which means we have the FOOD for you, with lots of recipies.
Skins are bigger in Texas

Potato Skin at Home
INGREDIENTS:
6 Medium Baking Potatoes
Vegetable Oil
All Seasoning Mix
8 oz. Shredded Cheddar Cheese
1/8 cup Bacon Bits
2 cups Sour Cream
STEPS:
1. Preheat oven to 400 degrees
2. Scrub the potatoes clean, rub with vegetable oil and bake for approximately one hour
3. Remove potatoes from oven, allow to cool slightly before handling
4. Cut into halves
5. Using a spoon carefully scoop the inside of the potatoes until ¼ inch of the potato shell remains
6. Increase oven temperature to 450 degrees
7. Sprinkle potatoes with All Seasoning mix, arrange in a baking dish and return to the oven baking on one side for 10 minutes
8. Flip the skins over and bake for an additional 10 minutes
9. Arrange the skins skin-side down and fill with cheddar cheese and bacon bits
10. Return to the oven and Broil until cheese is bubbly -- approximately 2 minutes
11. Serve hot with sour cream
Rattlesnake Bites
Ingredients
- 12 large jalapenos, seeded and cut in half
- 2 cups Monterey jack cheese, shredded
- 1 large egg
- 2 tablespoons milk
- 1 tablespoon flour
- 1 teaspoon Parmesan, grated
- salt and pepper
- 1 1/2 cup bread crumbs, seasoned or unseasoned
- vegetable oil
Preparation
- Wash jalapenos, cut in half, and take out seeds.
- Stuff each half with grated jack cheese.
- In shallow bowl, mix flour, egg, Parmesan, milk, salt, and pepper to taste.
- Place breadcrumbs in flat dish.
- Dip jalapeno in egg mixture and then in breadcrumbs.
- Place in freezer for 1/2 hour.
- Take out of freezer and deep fry in hot oil until golden brown.
- Serve immediately with Ranch Dressing or Cajun Horseradish Sauce!

Chef Carlo Zarri, aka the “Truffle Chef” joined us all the way from Italy to share his recipes for truffles and hazelnuts. He is in the last part of the North American tour, stopping to share his rich expertise. You can learn more about the Chef HERE, and see his mad skill in action HERE.
Chef Zarri’s Eggs Parmigianino with Truffles
Recipe for two:
4 eggs scrambled (or fried)
1/4 cup finely chopped onion
1 to 2 tsp olive oil
Parmesan cheese
Truffles to taste
Salt and pepper to taste
In a hot sauté pan place olive oil and onions. Sauté until onions are translucent. Next scramble eggs with Parmigiano, salt, pepper and shaved truffles. Pour to the pan and lower heat. When liquid is gone eggs are ready. Serve warm.
Chef Zarri’s Hazelnut Pasta Fettuccine.
8 oz prepared cooked fettuccine
1/4 of an onion julienne
1 tsp red hot chili peppers
1 tablespoon parmiginao cheese
1 tsp parsley
1 tsp olive oil
1 tsp butter
1/2 cup toasted hazelnuts, skin removed
In a warm sauté pan place olive oil. Add onions, the chili peppers and cook until translucent. Add butter then add the pasta and toss. To finish add the nuts and the fresh parsley. Toss well.
